The Ethiopian Wush Wush is a variety of coffee hand picked at peak ripeness, laid on African drying beds for sorting and removal of unripe and overripe cherries. After sorting, the cherries are left to naturally ferment for six days. After the six days, the fermented cherries are put back on the drying beds for 12-15 days before it is bagged and exported.
